For Christmas, Trista surprised me with a gluten free cooking class from a lady that teaches Yoga. Her name is Joi & we had the best time in her home. She truly loves to cook & has so many hints & techniques that it got me super excited to try new recipes. I met Trista at her house & we drove to Daybreak for a Yoga session that Joi was teaching. It was so fun & made me feel so happy & empowered . After down dog, warrior, lots of chair, we also did hand stands which I haven't done for a long time. Then we drove to Joi's house in Sugar House. There was several inches of snow on the ground around her house which was so beautiful & a bit scary driving up the hill! For our dinner,the menu was Thai Coconut Curry with Jasmine rice & roasted brussels sprouts yummy! She also showed us a raw cookie recipe made with quinoa, coconut, peanut butter, oats, maple syrup, & cocoa. These were also yummy but the peanut butter gave me a headache! Joi is a passionate foodie for sure & it was wonderful to have her share so much of her knowledge & experience with us. I had a great time. We talked & laughed for over 2 hours! The food was delicious & her home was lovely & inviting. She had a terrific library with lots of cook books. She also has recipes on Pinterest & Facebook which I'm excited to try. It was such a fun night & I am so grateful that Trista set it up for me. I loved having something just for me where I could leave for 8 hours plus & it was ok. The roads were a bit crazy getting home but it was fine. You learn here that the best way to drive in snow is to go slow!
